Best Way to Store Your Wine! We are often asked the question ... What is the best way to store my wine? Wine should be stored at a relatively constant temperature. Ideally, both red and white wines should be stored between 50° and 59° F. Avoid excess heat, direct sunlight or letting your wine freeze. At room temperature, your wine may age a little faster. We recommend that you stand your wine bottles up for a week or so before laying them down. If you plan to keep your wine for more than a few months, it's best to store your bottles in a horizontal position. This will keep the cork moist preventing it from drying out and helping the air trapped inside to facilitate the ageing process. Fermenting on Skins It is an age-old tradition to ferment grape juice together with the crushed grape skins, seeds and natural solids of the grape. When you pour the contents of our skin packs into the juice you will see virgin skins, seeds, a few stems and even the odd bit of leaf – all natural elements of winery crushed grapes from a healthy vineyard environment. Fermenting the juice on the crushed skins enhances the aromatic compounds, color and tannin of the juice. Experiments consistently indicate that wine made with skin packs have more intense flavors and increased aging potential.
